Guess who’s back!?!?!?!?!?!?
Hi guys! Last week was a bit hectic for me and most of you as well getting yourselves and kiddos back in school can be a bit crazy. So glad to have everyone back from all the summer fun and have the gym full again, we missed you all!
As summer winds up and Fall starts to creep in we……I….. tend to crave comfort food, and of course that means I want Mexican food, namely CHILE!!!!! So this week I cleaned up some of my favorites, green chile meat and calabacitas. It is not exactly, but it does the job for the hankering. I bought some pork meat for stew that was marked down, (bonus it was cheaper!), browned it in the Instant Pot with onion and garlic, threw in some green chile, a small can of tomato sauce and seasoned as usual and put it on the stew setting and let it go. DELISH!!!!! Then I put the yellow and green squash in the oven and roasted it in there. Just seasoned it to taste, and voila!
If you need to add some carbs to that meal, weigh out potatoes or throw in a serving of rice and there you have it.
Don’t completely cut out things you love to eat, be creative, stick to the basics and have fun trying new things to see how they come out. You will have some successes and some failures but give it a try.
