Meal Prep Monday!!
Hope you all had a great weekend and everyone is feeling better. Man, we have had some cooties flying around all over the place. When I don’t feel well I always want soup. I doesn’t really matter what kind, I just want soup. So here is what I made yesterday.
I love Bokchoy because it is so hearty. I just holds up so well. So I used a box of vegetable broth and added approximately 6-8 cups of water and added some bullion paste that I had and let that start to cook up.
I chopped up and added the following:
- Large bunch of bok choy
- Three chunks of daikon radish
- A bunch of green onion
- 3 different kinds of mushrooms: Oyster mushrooms, criminni and another one that I don’t know what they were
- Added about a 2-3 inch chunk of ginger
Just let that cook up for about 30 minutes or so. That’s for the soup alone.
I also made some delish ground pork for lettuce wraps that I added to the soup for my protein. In case you didn’t know and are able to eat pork you can find ground pork at the store, and it is 95% fat free so it can be a great option if you feel like you are about to grow feathers and a beak from eating so much chicken and turkey 🙂
For that I added about 2 tablespoons of olive oil to the pan with a bunch of green onion, about 2 table spoons of chopped garlic, 1 teaspoon of turmeric, 1 teaspoon of 5 spice blend, and a couple squirts of the delicious Umami paste and a few swigs of Liquid Aminos and tossed in 2 lbs of the ground pork.
SOOOOOO my serving was about 2 cups of the soup with ½ cup of the meat and ½ cup of rice in a bowl for my dinner tonight and it was LOVELY 🙂
