Here we are on Monday again! Hope everyone had a good weekend and didn’t go crazy overboard on the goodies for the Superbowl 🙂 It was a really busy weekend for us, so Sunday cooking challenged my brain power. I threw a roast in the crock pot before we went to hang out a bit for the game. Returned home and put a boneless pork loin in the oven for round one, then stuck some boneless thighs in for round two. While those were cooking, I steamed some broccoli, and added a veggie mix of brussel sprouts, broccoli and mushroom and onions in the oven to roast while the meat was cooking. I bought a delicious salad blend at Albertsons, it has kale, shredded beets and carrots. For carbs this week I didn’t get any sweet potatoes so we will mostly be having rice.
What about seasonings?? Something I use pretty regularly is Aminos, if you have a soy sensitivity you can find coconut Aminos. Great on roasted veggies! I also have found a lovely thing called Umami paste used in eastern cooking. This stuff is delish on just about everything, you can put it in your rice water to add some flavor and yum!
