Gonna be a quick one today. Covering simplicity. I had a great discussion with someone this morning who has been working on her nutrition. In three weeks she has lost 5 lbs! How awesome is that. She said she doesn’t feel like she’s doing a lot different than she was before. This is a great point. Sometimes it is in the details. Slightly changing something on purpose makes a world of difference.
This weeks meal planning was simple maybe boring but it works sometimes and it all tastes good! Stayed with chicken, boneless thighs and boneless breasts. Seasoned the thighs like an orange chicken with orange, little orange juice, broth, ginger and sesame oil and matched it up with yellow and Italian zucchini, celery, onion and red pepper. The breasts I seasoned up with lemon, pepper, garlic and Parmesan and a little olive oil. I paired that up with the yellow and Italian zucchini baked with rosemary, garlic thyme and a little Parmesan as well. Simple works !
