Meal prep Monday!!!!!!!!!
Hope everyone had a great week and a good weekend.
So another Sunday full of errands and cooking ?. As usual we want to focus on keeping things simple for the majority of the time. This applies to recipes and prep. So this week we utilized the Instapot to cook up the whole chicken I seasoned up with fresh garlic and ginger and some curry powder. It smelled delicious. I had made some bacon for breakfast so I was able use some of the fat from that to roast those delicious green beans and mushrooms, added some aminos, pepper and garlic and let that roast. I love roasted veggies. Next, I used a little more of that bacon grease to sautée the rest of the mushrooms, green onions and garlic of course, let that cook up a bit then put the ground beef in there and let that cook. When that was done I put that into a separate bowl. To keep it simple and use those flavors I pan seared some zucchini, deglazed the pan with some beef broth, then simmered with some spaghetti sauce. That is a trick a learned from my Grandma. An easy low calorie way to add tons of flavor. This week for carbs we made rice and my new favorite Farro.
