So here we are, another Monday!
As time goes on in am learning some things with my meal prep. I have been just grabbing meat and veggies and whatever is on sale as far as our veggies go. Some weeks it works good and some weeks we run short.
Sooooo, this week I decided to get a little smarter about what I was doing. I added up all of our meal portions for our protein put together. Here is the thing y’all are gonna freak out, I know I did. In order to keep us on target I have to cook over 15 pounds of meat a week!!!!!! WTH!?!?!?!?!?! 15 POUNDS. Who does that!?! OH MY GOODNESS! I mean seriously. Just craziness.
Well, now that my rant is over maybe this will help of some of you find you are sometimes falling short. Make sure you have all your protein covered, the veggies are easy to make up and keep chopped or just a really nice mix of greens for a salad. I am now dishing out ALL my meals for the week instead of just some. Much easier to have everything at your fingertips.
Oh, so my recipe for the week didn’t come out so great so I’m gonna have to retry that one and share later. The attempt was cauliflower tortillas. I don’t think I got enough of the moisture out before I put them in the oven. So I’ll update y’all on round two.
